How do I buy? What is the process?

If you've never purchased beef direct from a farm before this process may seem complicated. But don't worry, we have tried to simply the process as much as possible and we will walk you through the it to ensure your satisfaction.

  • Choose how much beef you want.

  • Decide how you want it packaged.

  • Arrange a date/time for us to deliver to your door.

  • Pay us.

Terms you should know:

  • Live weight:  what the animal weighs when it is alive, prior to being butchered. This weight means little to the consumer.

  • Hanging weight:  what the side of beef weighs before being turned into burger, steaks, and other cuts. Basically the whole animal minus all the inedible parts. This weight is what your cost is based off. For example, one quarter of a 700 lb. hanging carcass is 175 lbs.

  • Freezer weight:  the amount of meat you actually put in your freezer. The above referenced 175 lb. quarter will shrink before it gets to you. It will dry hang for 7-14 days for better taste and tenderness. Then the remaining inedible parts will be removed when it is cut to your specifications. Typically you will lose roughly 30-40% of the hanging weight by the time you put it in your freezer.

What does Windermere Beef cost?

We are charging $5.50 per pound of hanging weight. This price includes the standard processing and packaging fees from the butcher and delivery to your door. With reference to the above mentioned 175 lb. quarter you would pay us $962.50. You would put roughly 105-120 lbs. of meat in your freezer, making the actual cost of Windemere Beef between $8.00 and $9.00 per pound.

For comparison, certified organic beef typically starts around $7 per pound of hanging weight, making the end cost between $10 and $12 per pound in your freezer.

What is your process for purchasing your beef?

We take orders anytime. We typically know a ballpark time when animals will be ready for butcher.

- Place your order with us. Payment will be expected when the animals have been butchered and we know the hanging weight of your share. No down payments are required.

- Once the carcasses are hanging the butcher will contact you to go over how you would like your share cut. They will ask questions like how thick do you want your steaks cut and how many steaks in a package. They offer specialty meats and other options at an additional cost.

- When the butcher is done with your share, you will be contacted. You will pick up your meat at the butcher and pay him for his services at that time.
